Producer Gerardo Peña, known to many as El Lobo, has handcrafted this Raicilla to be smooth and distinct. A very clean expression of raicilla. Made in Taberna ” El Manantial”, Jacales, Jalisco from 100% agave Maximiliana that has been cooked with local oak for 3-4 days in adobe ovens above ground. The wild, natural fermentation process attracts fragrances and flavours from open-air fermentation, further defined by Arabic stainless steel pot distillation.

The first distillation is done with wood to transfer heat, the second distillation is done with gas to maintain a constant temperature for the production of vapours.
