Yoowe Bacanora is made by Maestro Ramon Miranda in the village of Alamos in the southern part of Sonora. Bacanora uses similar production methods to mezcal, but the state of Sonora is not included in the mezcal denominacion de origen and thus must use a different name. This Bacanora is made from agave Angustifolia Haw (maguey Pacifica). The agave is cooked in a traditional underground oven with mesquite and oak. After a wild fermentation, there are two distillations in stainless/copper stills.

PALMILLA SERRATA
A rare expression from the state of Sonora, this spirit distilled from the Sotol plant–known locally as a Palmilla–brings an extremely green nose followed by a crispness and spiciness that is hard to find elsewhere. A combination of oak and mesquite is used as the fuel source for cooking the Sotol hearts, which impart a distinct savouriness, and make it a wonderful sip to have alongside BBQ.
